Obituary

Holly Menk-Anderson, age 54, a beloved wife, daughter, sister, and cherished friend, died on April 17, 2026, from complications with amyloidosis at the St. Cloud Hospital.

Memorial Services will be held 11:00 a.m. Friday, May 8, 2026, at Dingmann Funeral Care Chapel in Kimball with Pastor Mark Schlasner officiating. Visitation will be held from 4-7 p.m. Thursday and 10-11 a.m. Friday, both at the funeral chapel in Kimball.

Holly Ann Menk was born on September 6, 1971, in Mankato, Minnesota. Holly was a bright light from the very start, made evident through her vibrant personality and the profound impact she had on those fortunate enough to know her.

Growing up in Mankato, Holly thrived in life, graduating from Mankato East High School in 1990. Her passion for interior design brought her to Mankato State University, where she pursued a Bachelor's degree, graduating at the top of her class. Holly's professional journey took her to Puhlman Lumber in New Ulm, where she excelled as a kitchen designer, and later to Surface Specialists in Kimball, where she co-owned the business with her husband, Mark.

On August 25, 2001, Holly was united in marriage to Mark Anderson at Centenary United Methodist Church in Mankato. Together, they created a warm and loving home on Lake Betsy near Kimball, a place filled with laughter, creativity, and cherished memories.

Holly had a zest for life and enjoyed exploring the great outdoors, finding joy in fishing, hiking, and camping, especially at their beloved cabin in Lutsen. She was also a talented artist, creating beautiful arts and crafts that showcased her creative spirit. She was a jokester and prankster that left others smiling and questioning what would happen next. Most importantly, Holly treasured her time with family and friends, always making those around her feel valued and loved.

Holly is survived by her husband, Mark; parents, Marvin and Mardelle Menk of Mankato; sister, Tanya (Stuart) Arends of Good Thunder; brother, Eric Menk (Courtney Welke) of Mankato; mother-in-law, Betty Anderson of New Ulm; sisters-in-law, Sue (Jeff) Boettger of Andover, Nancy Anderson-Hanson of New Ulm, and Merri (Mike) Roos of Hinkley; nieces and nephews, Mykala Arends, Angela Scott, Josh Boettger, Sarah Lueck, Natalie Adams, Tiffany Oekland, Chris Roos, and Nick Roos; great-nieces and great-nephews, Anderson, Callie, Liam, George, Ellee, Mathilda, Linn, Ivy, August, Mckinley, Theo, Autumn, and Alaina; and many extended family members and friends. She was preceded in death by her father-in-law, Merrill Anderson; sister-in-law, Merrilee Anderson; and great-nephew, Joseph Lueck.
